What is E202 and how is it made?

E202 is potassium sorbate, the potassium salt of sorbic acid (E200). Sorbic acid is a short-chain unsaturated fatty acid that stops moulds and yeasts from growing, and its potassium salt is used because it dissolves far more easily in water.

The sorbic acid used in food is made by chemical synthesis in a factory, not extracted from fruit or animal fat, and the European Food Safety Authority's re-evaluation discusses the catalysts used in that manufacture. Potassium sorbate is then obtained from this synthetic acid. The finished additive is a white powder or granule of defined purity, and is regulated as one group with sorbic acid (E200).

Why E202 is halal

It is also added to wine and cider to stop yeast restarting fermentation in the bottle, so finding E202 on a drink label says nothing about whether the drink itself contains alcohol.
